Sweet Potato Treat

Even though these potatoes are for dinner, doesn’t mean they can’t be sweet. My kids are plagued with my sweet tooth, so what better way to tame the tooth than with sweet, yet healthy food.
Just in the last few years have I come to love the amazing food that yams are. Yams (a type of sweet potato):
- Contain vitamin A!! 262% of the Daily Value in ONE small sweet potato!!
- Are High in vitamin C. 29% of the Daily Value in ONE small sweet potato!!
- Are High in beta – carotene 23,018 mcg!! (I don’t think there is a Daily value for beta carotene, but 23 thousand mcg seems like plenty!
Twice as high in fiber as regular potatoes
This is our favorite recipe for mashed sweet potatoes:
- Flesh from 4 baked sweet potatoes
- 1 tablespoon butter
- 1 tablespoon real maple syrup
- 1/4 teaspoon fresh grated ginger
Mix all thoroughly with a mixer, and serve.
Yum! Looks like dessert, but really it’s dinner!

20th Century Fox Home Entertainment Japan recently installed life-sized lightsabers in place of hand rails in Tokyo’s trains as part of its promotion for the new ‘Star Wars – The Complete Saga’ Blu-ray DVD boxset release. The lightsabers have built-in LED lights which can be turned on at the press of a button. The campaign has received positive reviews thus far, as it is the first time that this kind of installation has been used in an advertising campaign.
